3 Ways to Use Leftovers
People's opinions on leftovers vary widely. I have some friends who can't stand to eat something more than twice. I, on the other hand, love having something ready to go in the fridge. I have an almost obsessive goal of always using or eating everything I buy and cook. I hate to throw away food and make it my mission not to do it.
It can be really fun when groceries start to get low and it's like a game of bare bones "Chopped" where I have to cook a meal with just what I have on hand (Oh hai, kitchen sink soup!), or when something I made a few days ago needs to be either eaten or repurposed. Here are a few of my go-to ideas for using leftovers.
1. Frittata! Seriously, you can put almost anything in a frittata and it'll turn out good. I've done leftover Chinese food, leftover steak with onions and peppers, leftover cauliflower and BBQ chicken casserole (yes, really), leftover roasted vegetables, leftover grilled sausage. If you have leftovers that you don't want to eat as they are, just throw them into an oven-proof pan, scramble and add six eggs, then throw it in the oven for 25 minutes at 350 and you have a whole new meal.
2. Tacos! People who think taco fillings are just ground beef, lettuce and tomato don't know what they're taco-ing about. This is another great way to use leftover veggies, especially. When I roast vegetables, I always wind up with leftovers, and throwing them in a taco is a great option. Just add some salsa and it's a whole new taste. Or add some cheese and make a quesadilla!
3. Salad! Who says salads have to have "traditional" salad ingredients? Cucumbers, carrots, tomatoes? That stuff gets boring. Mix it up by adding leftover proteins, like BBQ pork or roasted chicken or broiled fish, and sides from dinner. I think sometimes people get so used to an idea in their head of what a certain meal (like tacos or a salad!) look like that they have a mental block when imagining it with different ingredients. Raw spinach could be a base for almost anything at all. I've even put vegetable curry on it to make a veggie curry salad.
