Jackfruit is hilarious for a number of reasons: It looks like something you should put googly eyes on and give to your kid to play with, it's just as weird on the inside as it is on the outside (like those of us who grew up in Cambridge), and vegetarians and vegans tout it as an epic meat substitute which is, quite frankly, asinine

Friends: Just because this stuff mildly resembles pork when you drench it in BBQ sauce, doesn't mean it should be your go-to meat substitute! The first time I tried the 'faux BBQ pulled jackfruit' it was N-A-S-T!  It looked like pork (kinda) but had the taste and texture of artichoke hearts drowning in BBQ sauce. Additionally, the stuff has very little protein but lots of fiber, so eating it in 'main course' quantities might make you a little loose in the caboose. 

When I tried the stuff without all the sauce on it, I realized it had potential. It makes a great addition to other things (think tacos, salads, eggs). It basically picks up any flavor you put on it, and you can either mix it up with stuff straight out of the can, or you can sauté it with flavors. Below are a few flavor profiles I've tried with jackfruit that I highly recommend. They are just flavor ideas to play around with as opposed to measured recipes. You don't need much of any of the ingredients to flavor a cup of jackfruit. Do try these out and let me know what you think. 

MAPLE SMOKED FLAVOR

    • maple syrup
    • liquid smoke
    • salt
    • smoked (or regular) olive oil
    • smoked paprika 

    AMERICAN CHINESE FOOD ReStaurant FLAVOR

      • fermented bean paste
      • garlic chili paste
      • fried chili oil  

      CITRUS PICKLED FLAVOR

        • lemon juice
        • lime juice
        • salt
        • cayenne pepper 

        Sichuan FLAVOR

          • sichuan pepper corns 
          • hot sesame oil poured over cayenne pepper
          • rice vinegar
